Billecart-Salmon Demi Sec NV is a full flavoured champagne and has an identical blend to the Brut Réserve. It maintains the same finesse and elegance as this cuvée but with a greater dosage. (42g/L)
A beautiful pale gold colour, ideal when served with patisseries or chocolate cake; it also turns a brioche afternoon snack into a unique experience.
The majority of the grapes used for vinification come from a radius of 20km around Epernay, where the Grand Crus of Pinot Noir, Meunier and Chardonnay co-exist, in the ethereal vineyards of the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs.
It all started here in 1818 when Nicolas François Billecart and Elisabeth Salmon were married, marking the creation of their Champagne House. This continues today with the 7th generation who continue the family tradition, staying faithful to the same motto: "Give priority to quality, strive for excellence".

Madame Bollinger was a skeptic towards rose Champagne and would only permit its production if it were truly excellent. Naturally the winemakers at Bollinger retrieved this thrown gauntlet and crafted a wine she would be proud of! This exquisite wine is a blend of 67% Pinot Noir, 28% Chardonnay and 5% Cote aux Enfants red wines. The richness of this Champagne makes it a versatile partner to duck, game, asian dishes and fruit deserts!

We were  fortunate to taste this wine at the Bollinger press release centre just outside of Aÿ and were mightily impressed with the quality. R.D. stands for Recemment Degorge, or recent disgorgement. These wines, first created by Madame Bollinger in 1967, are aged on their lees for many years and intended to be drunk very soon after disgorgement in order to enjoy its freshness! This being said, Bollinger R.D. wines have remarkable aging potential. The crisp freshness is accentuated by the low dosage, ultimately containing between three and four grams of sugar per litre.

Bollingers most exclusive cuvee comes from two tiny Grand Cru plots of Pinot Noir vines in Ay. These plots are miraculous not just for their terroir, but for containing the few survivors of the phylloxera crisis which ravaged the Champagne region in the early 20th century. These are among the oldest vines in France. The vines are treated exclusively with traditional methods, usually by hand or with a horse. The production for this vintage amounted to 3,300 bottles of Blanc de Noirs Champagne.
