2022 Ashbourne, Sandstone, Hemel-en-Aarde Valley
This is an innovative white blend that captures the expression of the sandstone-derived soils in the
Hemel-en-Aarde Valley. The focus of the wine is on bright minerality, salinity and vibrant natural acidity, coated by a full and gentle viscosity derived from a unique endemic yeast and the method of vinification. Nearly three decades of family experience have gone into this blend.

Ashbourne Sandstone is the first South African wine to undergo fermentation and aging in amphorae.
The vinification process involves treating each component separately. The Sauvignon Blanc undergoes fermentation in Terracotta Amphorae, Nombot Egg, and Ceramic Egg for 5 months. The Semillon is aged in neutral oak barrels for the same duration, while the Chardonnay experiences fermentation in Terracotta Amphorae and neutral oak barrels for 5 months.
The blend composition consists of 51% Sauvignon Blanc, 25% Semillon, and 24% Chardonnay, all sourced from the Hemel-en-Aarde Valley.

Vineyard: Single vineyard trellis Malbec - Blaauwklippen road - 254m above sea-level NE facing slope.Winemaking: The grapes were picked at optimal ripeness and cooled overnight to 4 degrees celsius. The next morning the grapes were destemmed to open top fermenters. The juice underwent spontaneous fermentation and stayed on the skins for as long as possible. Pressed into older French oak small barrels, 11 months in barrel, blended and bottled.

Now, he has a close relationship with farmers from 70 plots and manages to make over 20 wines from 35 grape varieties. Every wine from Pieter tells a real story.

Cutting a long story short, Pieter Walser very much likes native Spanish grapes such as Mourvedre, Garnacha, Carignan, Cinsault and others. In 2007 he started to produce a wine with only Mourvedre grapes, this Mourvedre grows from a beautiful little bush vine system in Swartland vineyard - planted in pure rugged Schist in the Riebeeck mountains.

Pieter was restricted to buying 1 ton of fruit, which meant only 3 barrels of wine were produced in 2021. Thirty percent of the wine was aged in new oak barrels, producing soft, juicy roundness.

The annual production of this cuvee is only 1373 bottles.

A bright and juicy Merlot with an attractively soft, creamy, chocolatey nose and a palate of dusky spice. Lush, ripe and deep in hue, this is a plump and sensuous Merlot with flavours of hedgerow fruits and a fine, gently leafy finish. A touch of elegance is achieved by using a modest amount (10%) of oak.

Keermont Syrah is a blend of three different Syrah vineyard sites growing on their vineyards which contribute complementary characteristics to the wine.

Small parcels of grapes are harvested by hand and separately vinified. Maturation tkes place in 500 and 225 Litre French oak barrels wine for around 20 months prior to bottling.

“Smoky and saline nose displaying tones of bacon, blackberry, graphite and liquorice, with violet and roses notes. Dense and bold, with a luscious fruit core.”

2020 Keermont, Terrasse, Stellenbosch
In 2003 Mark and Monica Wraith bought 2 adjacent farms which now form Keermont Vineyards.
Their aim is to produce some wines which reflect the small vineyards from where the grapes are picked. Nowadays they use some organic practices.

Terrasse is a barrel fermented white blend which derives its name from the terraced vineyards leading up the mountains on the estate.
This wine is based on Chenin blanc (39%) with Sauvignon Blanc (34%), Chardonnay (13%) and Viognier (14%) grape.
The grapes are hand harvested and vinified separately. The white wine is fermented by indigenous yeast in French oak barrels and spends 12 months maturing on the lees. The bottling is by hand without filtration. Less than 10 000 bottles were produced in 2018.

Producer notes: A polished light-yellow gold colour, this wine has a complex bouquet of prominent citrus and stone fruit with notes of vanilla, freshly green cut apple, Frangipane flowers, and a hint of cut grass and earthiness. The win

2019 Spice Route, Mourvedre, Swartland
Grapes were hand harvested, destalked and lightly crushed into open concrete fermenters. Manual punch downs were done three times a day during fermentation. Fermentation lasted seven days, after which the wine was pressed off the skins and transferred to old French and American barrels for malolactic fermentation and 14 months ageing The Mourvedre (also called Mataro in Australia, Monastrell in Jumilla) has a dark colour due to the thick skin. Some intense flavour of dark fruit, smoky, pencil sharper, black pepper, meaty and leather with a great full smooth tannins "Without [Charles] the Swartland would still be regarded as a rural backwater" wrote Tim Atkin, who awarded the winery 'Cru Bourgeois' status in his South Africa Classification in 2018.

2017 Vergelegen DNA Stellenbosch
A medium to full bodied red from the Western Cape of South Africa. A blend of Cabernet Franc, Merlot and Cabernet Sauvignon with red berry flavours and notes of coffee and chocolate. Smooth tannins and a long finish it's best enjoyed with lamb, beef stew or pasta dishes.The grapes were hand picked, de-stemmed and cold soaked for a week. After fermentation there was a 42 day maceration on the skins followed by malolactic fermentation in stainless steel tanks. Finally the wine spent 16 months in 100% new French oak before bottling.

The 2021 Schaapenberg Sauvignon Blanc boasts a highly aromatic profile, featuring ripe passion fruit, guava, notes of black currant leaf, a hint of lemongrass, and a pronounced minerality. The wine leaves a lasting and refreshing aftertaste. It pairs wonderfully with fresh oysters, sushi, and delicately spiced Thai dishes.These grapes originate from the renowned Schaapenberg Vineyard situated on Schaapenberg Hill. Historically, this hill served as Governor Van der Stels' lookout point for observing ships rounding Cape Point. The single vineyard, spanning 2.5 hectares, was initially planted in 1988 and enjoys a prime location just 6.5 kilometers from False Bay, facing directly south at an elevation of 320 meters above sea level.VINIFICATION: The grapes were carefully hand-picked and then destemmed without undergoing crushing. The nose is filled with abundant, ripe tropical fruit aromas, yet the wine maintains its vibrancy and allure thanks to its remarkable acidity and refreshing palate. To fully appreciate its qualities, it's recommended to serve this wine well chilled, at a temperature between 8 to 10 degrees Celsius.The grapes for this wine were carefully harvested, with some left to dry on the vines or wooden pallets until they reached the desired sugar concentration. These grapes were then processed, without crushing or de-stemming, and fermented with their skins in plastic bins. This unique approach helped break down cell tissue and extract slightly higher quantities of juice. The resulting sweet juice was subsequently transferred to old barrels to complete the alcoholic fermentation process.
