Pierre-Yves Colin-Morey
Pierre-Yves Colin-Morey, commonly referred to as PYCM, has become one of the most popular producers in Burgundy, with a number of excellent cuvees from Grand and Premier Cru sites in the Cote de Beaune.
They are based around the appellation of Chassange-Montrachet with a lot of their vineyards found in Saint-Aubin.
Pierre-Yves and his wife Caroline also set up a negociant label in 2001, with a wealth of experience as they both come from historic Burgundy families. Pierre, the son of Marc Colin, broke away from his family’s domain and set up his own operation taking a share of 6 hectares from the family’s plots. Now, both the domain and the negociant wines are bottled under the same label from the Morey family vineyards.
They produce up to 8 Chassange-Montrachet Premier Cru wines, 3 Meursault Premier Crus, 5 Saint-Aubin Premier cru wines and 2 Puligny-Montrachet Premier Crus. They also make a number of lieu-dit village wines from Meursault, Chassange-Montrachet, Puligny-Montrachet, Saint-Aubin and Santenay. Alongside a Pinot Noir Les Choilles from Saint-Aubin.
Their white wines are whole-bunch pressed and fermented with native yeasts in 350 litre demi-muid barrels. They age for 16-18 months in barrel then are bottled with no filtration. Pierre believes that this gives greater freshness and energy to the wines.
