GlenAllachie Amontillado Sherry Cask Finish – The Wood Collection

The first iteration of GlenAllachie's Wood Collection to be featured in their brand new labelling. This series is a love letter to the casks that are now synonymous with the distillery, sherry casks. Amontillado sherry start it's life as a Fino sherry, whereby a 'flor' (a yeast layer) resides in the cask and feeds on the residual sugar in the wine to produce a dryer sherry, but then undergoes a further maturation without the flor to allow for further oxidisation of the wine. Maturing GlenAllachie's heather-honey style of malt in these intriguing casks has led to notes of toasted hazelnuts and caramel sauce. Bottled without chill-filtration or artificial colouring.
