GlenAllachie Fino Sherry Cask Finish – The Wood Collection

This excellent collection by the GlenAllachie Distillery explores the fine sherry casks that are instrumental in the distillery's style. Fino is a particularly dry style of sherry due to the active layer of yeast - the 'flor' - that resides in the cask as the wine matures, metabolising the residual sugar and preventing the wine from oxidising. In this limited release, GlenAllachie have filled Fino sherry casks with their matured Scotch whisky to inherit these unique flavours, leading to notes of stewed pear, sugared almonds and vanilla custard. Non-chill filtered and natural colour.
