Wire Works Virgin Oak Finish – White Peak Distillery

White Peak Distillery have gone from strength to strength since their well-received inaugural release, and this whisky proves another fantastic addition to their portfolio. Initially matured in first-fill ex-bourbon barrels from Heaven Hill before an 8-month finishing period in 12 virgin oak casks that were charred to a mix of levels 3 and 4, caramelising the sugars in the oak and imparting big toffee and coffee notes onto the whisky. Lightly peated, this outturn of 3,061 bottles delivers lots of caramelised sugar, leather and apples on the nose, with a chewy texture filled with fruit, smoky-sweet clove and coffee.
