Abasolo Mexican Corn Whisky
A fascinating whisky from Mexico's Destileria y Bodega Abasolo. Produced from a strain of corn cultivated over 200 generations by local farmers, Cacahuazintle (kaka-wha-SINT-lay) corn, this whisky is a faithful showcase of heritage grains. A small portion of the corn utilised is malted, an atypical approach for corn whiskey, before a careful mashing with corn flavour. Fermented and distilled, the spirit is then matured in virgin oak casks until deemed ready for sipping. A profile of roasted corn and black tea meet familiar notes of vanilla and honey, with hints of leather.
