Chateau Pavie is a Grand Cru Classe A estate in Saint-Emilion, Bordeaux. The estate covers over 35 hectares of vines, just South-East of the village of Saint-Emilion on a limestone plateau. The estate was classified as classé A in 2012, after previously being classé B since 1954. Over the course of history, the estate has established itself as one of the most renowned first growths.
The vineyards date back to Roman times, and it takes its name from the orchards of peaches (pavies) which used to stand there. The modern estate was assembled by Ferdinand Bouffard in the late 19th Century when he bought several plots from different families. However, towards the end of WWI, they struggled with phylloxera, and Bouffard ended up selling the estate to Albert Porte, who later sold it to Alexandre Valette in 1943. It was later sold to the current owner, Gerard Perse in 1998 for $31 million. This was a turning point for the estate as he virtually ripped out all the equipment and replaced it with more modern systems, and then hired Michel Rolland as consultant.
Their wines are renowned for their elegant, harmonious style. They offer a delicate bouquet with depth of fruit, richness and great concentration. They are typically a blend of 55% Merlot, 25% Cabernet Franc, and 20% Cabernet Sauvignon. The wines are fermented in new oak, then aged for 18th months before being bottled unfiltered.
