2021 Chablis 1er Cru Cote De Lechet Domaine Bernard Defaix
Bernard Defaix is the largest producers of Cotes de Lechet 1er cru with 8 hectares. Great exposition, situated on the slope of the Milly village and on the right banks of the Serein river.
Underground of the vineyard, they found some impressive fossils of Exogyra virgular (oyster fossil from the Jurassic period) which is typical of Chablis top vineyard.
This wine has a potential to aged well in your cellar (3 to 5 years at least)

2022 Chablis 1er Cru Fourchaume Bernard Defaix
More discreet wood influence combines with ripe aromas of white and yellow peach, seashore wisps and a hint of phenolic character. There is both good volume and energy to the utterly delicious, rich and generously proportioned, even plush, flavours that tighten up on the clean, moderately dry and citrus-inflected finish. This should definitely drink well young but Fourchaume is always deceptively approachable in its youth so I have no doubt that it will age well too.

Situated in the heart of the Chablisian vineyard. The domaine own 12 hectares to product the Chablis 2019. The wine is made and aged in stainless steel tank to keep the characteristic of the Chardonnay grape in the region of Chablis.

A vague whiff of the exotic adds breadth to the aromas of lychee, dried apricot and iodine where a background hint of honeysuckle slowly emerge. The strikingly fine and precise yet nicely concentrated middleweight flavours flash a lovely minerality that adds a sense of lift on the balanced and equally long finish. This classy effort needs to add depth but that should develop if given a chance.

2020 Domaine Bernard Defaix, Chablis Grand Cru, Vaudesir
Located between Valmur and Preuses, next to Grenouilles, the grand cru Vaudésir spreads over almost 15 hectares. Vaudésir is characterised by a more sloping land, a less calcareous and a bit lighter soil than the other grand crus.
The wine is fermented and aged in old oak barrels. The coolness of the cellar puts the wine through a natural cold stabilisation process. Then the wine is bottled with a light filtration after 12 months of ageing.
Round, elegant and seducing, with white flowers on the nose and palate, this wine has also great fineness. A beautiful wine that will enhance any dish, try it with fish dishes even in rich sauces.

Moderate wood is present on the vaguely exotic nose of white and yellow peach, iodine and algae nuances. There is impressive density and intensity to the utterly delicious and beautifully textured medium-bodied flavours that also exude a subtle minerality on the tangy, succulent and bone-dry finale that is like sucking on an oyster shell. Good stuff and well-worth considering.

There is solid volume and vibrancy along with very good density to the middleweight flavours that retain good punch and a discreet stoniness that surfaces on the moderately austere, balanced and nicely persistent finish. As is usually the case, this is an understated wine of finesse.

2020 Chablis 1er Cru Fourchaume Bernard Defaix
Fourchaume is the biggest 1er cru in Chablis (115 hectares) with a top exposure (South/ south East).
This wine is vinified on used oak barrel with a regular “Batonnage” (action to stir the wine with the lees). After an ageing of 12 months in oak the wine bottled with a light filtration.
This 1er cru is always a full bodied style compare to the other 1er cru.

2022 Domaine Bernard Defaix, Chablis Grand Cru, Bougros
There is excellent Chablis typicity to the aromas of cool pear, mineral reduction and shellfish. The medium weight flavours aren’t quite as concentrated or refined though they are definitely more powerful, especially long the robust and borderline rustic finale.
