Waterford Single Farm Origin Sheestown – Edition 1.1
Another exceptional Irish whisky from Waterford's Single Farm Origin series. Sheestown 1.1 has been matured in a combination of French and American oak casks, before being bottled up at a healthy 50% ABV. The barley used to make this expression is harvested near the medieval, south-east town of Kilkenny.

Waterford Single Farm Origin – Lakefield 1.1
The first edition from the Lakefield farm harvest by Waterford, made with Irish Irina malted barley grown on the Duggan's Co. Laois farm. Aged for 3 years and 7 months in first-fill American oak and French oak casks, Lakefield 1.1 offers notes of chocolate and warm custard followed by rhubarb, apple tart and orchard fruits.

Waterford Single Farm Origin Ballymorgan 1.2
Released as part of the Single Farm Origin series, this Ballymorgan 1.2 expression was made with barley grown by Robert Milne in County Wexford. Waterford continue to challenge terroir in this series, and we think they're doing a great job at doing so thus far. Notes of vanilla custard, mango and subtle spices.

Waterford Single Farm Origin – Bannow Island 1.2
The second batch of Bannow Island - made with barley from County Wexford by Ed Harpur - comes a little older and wiser than the inaugural batch. Matured in a combination of first-fill American oak, virgin oak and ex-fortified wine casks, this whisky is becoming a real treat with notes of bright fresh fruits, toffee, butterscotch and subtle spices.

Waterford Single Farm Origin Ballykilcavan – Edition 1.2
Made with barley grown by David Walsh-Kemmis in county Laois,  Waterford Ballykilcavan was matured in first-fill American oak, French oak and ex-fortified wine casks. Aged for a few months longer than the first batch, this whisky is a little older and wiser, with notes of pear, white pepper and toffee.

Waterford Single Farm Origin – Hook Head 1.1
A rich, citrusy expression from Waterford with notes of ginger biscuits and salted popcorn. Hook Head 1.1 is the first edition in the series, made with barley harvested in 2015 from Hook Head farm. Aged in a combination of casks including first-fill Virgin American oak and French oak, this Irish single malt was bottled up at 50% ABV without any added colouring or chill-filtration.

Waterford Micro Cuvée – Lómhar

Waterford Single Farm Origin – Grattansbrook 1.1
The first release in the Single Farm Origin series to have been made with barley grown on Grattansbrook Farm in Co. Kildare. This series from Waterford supports a number of farmers, in this case, Andrew Bergin, across Ireland and uses their different barley variants to create an array of unique styles and flavour profiles in their whiskies.

Waterford Organic: Gaia 1.1
Introducing The Arcadian Series - an array of organic, biodynamic and heritage distillates from Waterford. Gaia 1.1 is the first organic Irish whisky as certified by the Organic Trust, and because the yields of Irish organic barley from a single farm are unworkable, Waterford have combined the crops from a series of maverick farmers: Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley, Trevor Harris and John Mallick.

The whisky is matured in 42% first-fill American oak, 17% virgin American oak, 18% Vin Doux Natural and 23% premium French oak, before it was bottled at a firm 50% ABV. Notes of malty fig, salted caramel and seaweed on the nose followed up by bright cherries, butterscotch and pear on the palate.
