2020 Domaine Bernard Defaix, Chablis Grand Cru, Vaudesir
Located between Valmur and Preuses, next to Grenouilles, the grand cru Vaudésir spreads over almost 15 hectares. Vaudésir is characterised by a more sloping land, a less calcareous and a bit lighter soil than the other grand crus.
The wine is fermented and aged in old oak barrels. The coolness of the cellar puts the wine through a natural cold stabilisation process. Then the wine is bottled with a light filtration after 12 months of ageing.
Round, elegant and seducing, with white flowers on the nose and palate, this wine has also great fineness. A beautiful wine that will enhance any dish, try it with fish dishes even in rich sauces.

In terms of its geology, Montmain is characterized by its Kimmeridgian marls and clay, which contribute to the Climat's lively, crisp and mineral attributes. Domaine Louis Michel's 2018 Montmain 1er Cru is vibrant and narrowly delineated. A wonderful expression.
