It has been an organic operation since the vintage of 2015. The vineyards are grassed and fertilized only with products of organic origin.
The vineyards of Tenuta Cucco cover 13 hectares and include a number of varieties, dominated by Nebbiolo, alongside Dolcetto, Chardonnay and Barbera.
GIAN PIERO ROMANA, AGRONOMIST AT TENUTA CUCCO
This 100% Dolcetto d’alba grape is harvested then pressed. The grape juice and the pomace are fermented in stainless steel tanks at a temperature of 26C. After 5 to 6 days, the vat is decanted. Only the juice or wine will carry on to ferment at a lower temperature. This technique brings out the fruity character of the Dolcetto d’Alba.
The softness and the good balance between the fruit and the acidity gives the wine a light, red wine style. The palate is juicy, with very low tannins.
