2018 Fabre Gasparets, Boutenac, Corbieres
Corbieres-Boutenac is a relatively new red wine appellation of the Languedoc region of southern France. Created in 2005, it produces high-quality wines. Enticing aromas and flavours of cherry and black fruits balanced with sweet spices. The finish is smooth – a fine and elegant wine.
The Fabre Family have been producing wine for over four centuries, settling in Gasparets in 1711.
Today 100% of its vineyards are certified organic, producing concentrated, flavoursome wines from old vine Carignan, Mourvèdre and Syrah grapes.
Vinification:
Maceration for 20 days with destemming for the Syrah and the Mourvèdre with regular pumping over. Carignan whole bunch vinification. Blending is done before aging.
Maturation :
12 months in French oak barrels.
Drink now, will also develop over 8 – 10 years.
Food pairing: Duck breast marinated in spices, rib of beef or roast leg of lamb.

2022 Foncastel, Picpoul de Pinet
Domaine Foncastel’s Picpoul de Pinet hails from the Languedoc region in the south of France, specifically the coastal area near the Thau Lagoon. Displaying bright and lively aromas and flavours of citrus fruits such as lemon and lime, along with hints of green apple and floral notes. A zesty and citrusy wine with subtle saline or mineral qualities, which is attributed to its proximity to the sea.This crisp and lively wine pairs exceptionally well with seafood, especially oysters, mussels, and other shellfish, due to its bracing acidity and maritime influence. It also complements lighter Mediterranean dishes, salads, and fresh cheeses.

2022 Ormarine, Duc Morny, Picpoul de Pinet
The history of l’Ormarine dates back to 1922 when local winegrowers formed an association; since then there has been ongoing investment across the variety of appelations in the region.
The Picpoul Grapes are harvested at night, low temperature fermentation followed by thermo-regulated storage maintains freshness.
Intesne aromas of citrus fruits, white flowers and tropical fruit deliver a well-balanced food-friendly wine with a zingy crispness.
Perfect as an aperitif or to accompany Mediterranean seafood dishes, particularly “Bouillabaisse” - a traditional Provençal fish soup
