2016 J. Bouchon, Block Series Carmenere, Maule Valley
It all started with Emile Bouchon at the end of the 19th Century. Today Julio Bouchon (4th generation) and his children carry on the family tradition of making distinctive and terroir-driven wines.

The Block Series is all about terroir. These wines, made from Carmenere grapes, are from small parcels no more than then than 2 hectares each. After the harvest, the grapes are stocked in a tank at a low temperature for 48 hours. Then the fermentation process begins for 12 days at a normal temperature (24-28C). This process gives the wine a pure expression of the grape.

The wine is aged in foudre (70%) and French oak barrels (30%) for 12 months.

The wine will pair perfectly with Indian and Mexican food, stuffed mixed spiced vegetables or would be excellent with barbecued grilled meat.

2020 J. Bouchon, Pais Viejo, Maule Valley
Grape: 100% organic Pais, aged 4 months in concrete vats.
Light, crunchy style of red from a variety that was, until recently, Chile’s most widely planted grape. Harvested from the surrounding trees that these old vines have adopted as their home, this has a brightness and scimitar-sharp acidity that is the perfect foil for rich, hearty dishes.
Fruity aromas are the stand out, with just a hint of herbs. The palate is very juicy and fresh.
