2021 Vigneti del Salento, Zolla, Primitivo di Manduria
Filippo Baccalaro harvests the Negroamaro (80%) and Malvasia Nera grape (20%) from the western part of thePuglia region in the South of Italy. 80% of the vineyards come from old bush vines and the rest from trained vines that are at least 20 years old.  The grapes are totally destemmed and crushed before being cooked at a low temperature (10C) for a maceration of 8 – 10 days. This technique gives the final wine very fruity aromas and freshness on the palate when tasting. The fermentation takes place in stainless steel tanks. The wine is aged in small old barrels for 8 to 10 months.

This is a bright a fruity red wine with a remarkable freshness. Notes of red cherry and a hint of cloves on the full bodied palate, a definite complexity here.
