Billecart-Salmon
The house was founded in 1818 with the marriage of Nicolas Francois Billecart and Elisabeth Salmon. The business has remained in the family since then, and today is run by Mathieu Roland-Billecart, representing the family’s seventh generation. Motivated by a passion for wine, from vine to the glass, each member of this family has brought their own personal touch to this House.
They grow vines across 100 hectares, as well as collecting from trusted champagne growers. Then each parcel is vinified separately, and fermented at lower temperatures. This ensures a slower process, which preserves the character of high-quality fruit. Some of their wines are aged in stainless steel to preserve these aromatics, others continue their journey in oak. The Houses entry level brut sees 30 months of lees-ageing, and vintage cuvees regularly see a decade.
The House is arguably best known for their rose, a blend which is among the most powerful of all rose champagnes. The Elisabeth Salmon Rose was named to honour one of the Houses founders, alongside the Cuvee Nicolas Francois. This family business has continued to pay homage to its roots, acknowledging the traditions of the family by celebrating its namesake.
