2022 Waterkloof, Circumstance Sauvignon Blanc, Stellenbosch
Nadia Barnard-Langenegger has a natural approach to winemaking. This Sauvignon Blanc cuvee is from 3 blocks from south-facing sloped 2 miles from the Atlantic and 270-300m above sea level. Warekloof winery has been designed with a gravity cellar allowing Nadia to have a low level of involvement in the process. The bunches are gently pressed to extract the juice which is left 24 hours to settle naturally. The fermentation starts with a natural yeast in large 600 litre barrels. It is fermented for 5 months and then aged on the lees for a further 2 months. A light filtration then takes place prior to bottling.
