2022 Alasia, Brachetto d’Acqui
The Brachetto variety may have originated in Provence, but today it is grown in much larger quantities in Italy, in particular in Piemonte. The Brachetto vine is delicate, giving low yields from which sweet red wines with the colour and flavour of strawberries are produced. The grapes for Alasia Brachetto d'Acqui are sourced from vineyards in the Monferrato hills in the south of the province of Asti. These south-west facing vineyards are situated at altitudes of 250 and 400m above sea level. The vines have an average age of 20 years and the soil is limestone clay.
The grapes are hand harvested toward the end of August. The crushed grapes are chilled in stainless steel and kept in contact with the skins for 2-3 days. Grapes are pressed in a modern pneumatic press
and the must is fermented in a pressurised tank, but fermentation is halted to leave 5.5% ABV and approximately 100g/l residual sugar.

2013 Albury, Classic Cuvee, England
Comprised of Pinot Noir, Chardonnay and Pinot Meunier, this wine has all the hallmarks of a fine sparkling wine. The subtle fruit on the nose, red berries from the Pinot and citrus from the Chardonnay, is harnessed up by a long, textured palate that remains and satisfies. NV Ayala, Brut Majeur
Brut Majeur stands as the quintessential embodiment of Ayala's style, with Chardonnay, dominating the blend at 55%, Pinot Noir 30%, Pinot Meunier, 15%.
The commitment to preserving primary aromas is evident in the low dosage and stainless-steel vat vinification. A meticulous three-year aging process in the cellars imparts the final finesse, producing an elegantly balanced wine.

Incorporating over 70 crus from across the Champagne region, Brut Majeur is vinified with 120 individual stainless-steel vats dedicated to specific crus, grape varieties, and years, ensuring the preservation of each terroir's integrity and personality. This results in an extraordinary blend that reflects an impressive diversity of flavours.
Brut Majeur opens with a fine mousse, revealing aromas and flavours of white flowers, lemon, pears, apples and a touch of brioche.

Great value, this Champagne works well as an aperitif, pairs beautifully with white fish, shellfish, poultry, or a cheese platter.

NV Billecart-Salmon, Demi Sec
VM91
Billecart-Salmon Demi Sec NV is a full flavoured champagne and has an identical blend to the Brut Réserve. It maintains the same finesse and elegance as this cuvée but with a greater dosage. (42g/L)
A beautiful pale gold colour, ideal when served with patisseries or chocolate cake; it also turns a brioche afternoon snack into a unique experience.
The majority of the grapes used for vinification come from a radius of 20km around Epernay, where the Grand Crus of Pinot Noir, Meunier and Chardonnay co-exist, in the ethereal vineyards of the Montagne de Reims, the Vallée de la Marne and the Côte des Blancs.
It all started here in 1818 when Nicolas François Billecart and Elisabeth Salmon were married, marking the creation of their Champagne House. This continues today with the 7th generation who continue the family tradition, staying faithful to the same motto: "Give priority to quality, strive for excellence".

2014 Bollinger, La Grande Annee
VM98
La Grand Annee is Bollingers prestige cuvee and is only produced when exceptional vintages occur. The grapes come exclusively from grands and premiers crus. Bollinger use only the cuvee juice in the making of La Grand Annee. The first fermentation is always carried out 100% in old oak barrels, which is quite exceptional in champagne.

On the nose it is presents a delicious composition of fruit flavours, blending strawberry juice, mandarin and rhubarb. It is silky, as a prelude to the voluptuous, juicy wine. Stone fruits set the tone ahead of a finish full of blood orange notes. a harmonious combination which shapes a tannic and elegant structure. With a delicate hint of oiliness on the finish.

NV Bollinger, PN AYC18, Champagne
We were  fortunate to taste this wine at the Bollinger press release centre just outside of Aÿ and were mightily impressed with the quality. This is the finest PN release to date and takes the series to a new level… PN AYC 18 is a wine of richness, density & textured fruit, whilst offering an impressive vibrancy & saline freshness that cuts through at the core of the wine. This is a very serious wine that represents excellent value for money. A must for the Pinot Noir based Champagne lover. You will not be disappointed! Bollinger PN AYC 18 is made exclusively from Pinot Noir (PN) with the majority of the grapes coming from estate owned vineyards in the Grand Cru village of Aÿ, based on the superb 2018 vintage. Aÿ is one of the rare 17 villages to be classified as Grand Cru in the Champagne region. The vineyards are situated at the heart of three important areas: the Côtes des Blancs, Montagne de Reims and Vallée d

R.D. stands for Recemment Degorge, or recent disgorgement. These wines, first created by Madame Bollinger in 1967, are aged on their lees for many years and intended to be drunk very soon after disgorgement in order to enjoy its freshness! This being said, Bollinger R.D. wines have remarkable aging potential. The crisp freshness is accentuated by the low dosage, ultimately containing between three and four grams of sugar per litre.
